Tank Cooks Spicy Cowboy Bison Steaks

Ingredients: 

  • 2 bison ribeye steaks 
  • 4 tablespoons olive oil 
  • 1 teaspoon coriander 
  • 1 teaspoon cumin 
  • 2 teaspoons paprika 
  • 1 teaspoon thyme
  •  1 teaspoon oregano
  •  1 tablespoon brown sugar
  •  1 tablespoon unsweetened cocoa powder 
  • 1 tablespoon lemon juice 
  • 1 teaspoon chili powder
  •  1 tablespoon garlic powder
  •  1 dried chili pepper 
  • ½ teaspoon cinnamon 
  • ¼ teaspoon nutmeg

  •  salt & pepper to taste

 Directions: 

  1. Combine the coriander, cumin, paprika, thyme, oregano, brown sugar, cocoa powder, lemon juice, chili powder, garlic powder, dried chili pepper, cinnamon, nutmeg, salt, and pepper in a small bowl. 
  2.  Spread 2 tablespoons of olive oil on each side of the bison ribeye steaks. 
  3. Rub the seasoning mixture into the steaks with your hands, ensuring they are evenly coated. Drizzle over more olive oil. 
  4.  Let the steaks rest until they reach nearly room temperature. 
  5. Heat a grill pan or grill over medium-high heat. 
  6. Sear both sides of the steaks for 2-4 minutes to achieve grill lines. 
  7. Check the internal temperature of the steaks using a meat thermometer. The steaks are ready when the internal temperature reaches 120°F. 
  8. Remove the steaks from the heat and let them rest for 10 minutes before slicing.
