Carne Asada Tacos Are The Greatest Invention In The Past Thousand Years

In case you forgot how calendars work, today is Cinco de Mayo. And while the holiday means so much more for Mexican independence and Mexican heritage, it also means that we get to eat a shit ton of tacos. 

Personally I am of the belief that the tortilla is the best vessel for consuming any sort of handheld food item. The burger bun is great and everything, but sometimes it's a little too much. There hasn't been a ton of innovation to the hot dog bun over the years. A bao bun is deliciously soft, but I don't think we're at a point as a society yet where we can just throw anything into a bao bun. But the tortilla? Well the tortilla reigns supreme. Because not only can you fill it with your typical taco ingredients, but you can put anything else in there that you want, too. 

You want to make a taco smash burger? Go nuts. 

You want the best version of what a "hot dog" could possibly be? Have a sausage wrap. 

Want a slice of brisket to go with your bacon and eggs for breakfast? Toss it all in a tortilla and enjoy. 

Tortillas are so elite that even the shitty flour ones you can get at any grocery store go hard. But my favorite thing to throw in a tortilla is some marinaded and grilled skirt steak, topped with a creamy salsa verde, some diced white onions, and a little bit of cilantro. It's so simple, and that's what makes it so incredible. The carne asada taco is everything you could ever want in life.

So if you're looking for something to whip up for dinner tonight, go ahead and fire up the grill to get some carne asada tacos going. And here's the thing--I'm just a simple gringo. This isn't meant to be the ultimate and most traditional carne asada recipe you'll ever see. So while this recipe will pump out some damn good tacos, there are plenty of ways you can take it and make it so much better. Probably by swapping in some better tortillas, for starters. But if you're only making one trip to your standard grocery store and some Mission tortillas are all you can find, I promise you they also kick ass as well.
