Tank Cooks Grilled Prime Rib

Ingredients 

  • 1 prime rib roast
  •  2 tbsp kosher salt
  •  1 tbsp cracked black pepper 
  • 1 tbsp garlic powder 
  • 1 tbsp fresh rosemary (or 1 tsp dried)
  •  2 tsp onion powder 1–2 tbsp olive oil

 Directions 

  1. Pat the roast dry. Rub with olive oil. Mix spices and coat the roast. 
  2. Let rest at room temp for 1 hour.
  3.  Heat grill to 300–325°F (indirect heat). 
  4. Place the roast fat side up on the cooler side. Cover and grill for ~2–2.5 hours, until the internal temperature reaches 120°F (for medium-rare). (Optional) Sear over high heat for 1–2 mins per side. 
  5. Rest under foil for 20–30 mins. Slice thick and serve. 

Pro Tip: Add a few wood chunks (oak/hickory) to the coals for an extra layer of smoke.
