The Perfect Summer Coleslaw
INGREDIENTS
-1 lbs of shredded vegetables (I’m using green cabbage, purple cabbage, carrots & kale. A pre-sliced bag of slaw mix vegetable mix will work just fine)
-1/4 cup rice wine vinegar
-2-3 Tbsp peanut butter
-1.5 Tbsp sugar
-2 teaspoons sesame oil
-2 Tbsp soy sauce
-1 Tbsp Siracha
-1 Tbsp fresh ginger, minced
-Sesame seeds and chopped nuts to finish (optional)
METHOD
-Combine all ingredients (except for shredded vegetables) in a mixing bowl and whisk until smooth (sugar and peanut butter should be dissolved)
-Pour dressing over vegetables
