20 Dollar Chef - Swedish Pancakes n Blueberry Jam

On todays episode of 20 Dollar Chef, I’m going with another strong breakfast item. It's also pretty damn easy to make, Swedish pancakes.  My lady came out of the woodwork with this recipe one morning and I loved it. There are minimal ingredients, and the ingredients are items plenty of folks already have at the house. One of the biggest details in this recipe is the rolling of the pancake once you add the batter in. Thats going to spread the batter out and make the pancakes thinner and larger. 

Once they are done and you have a decent stack, that’s when you make a pile for yourself. Throw some butter on the top one and roll away. I'm not sure why they get rolled, but it does make it a more fun dish. Then add your jam and syrup and you're off and running. 

The Jam couldn't be easier. I threw in one container of blueberries, a quarter cup of sugar, a dash of cinnamon and some lemon juice. Let it cook down, and you are good to go. 

Pancake recipe:

  • 2 cups milk 
  • 3T Sugar
  • 2T Oil
  • 1 cup of flour

(After mix and whisk 1 cup of milk and all the other ingredients, then add 2nd cup of milk and whisk again.) 

Blueberry Jam

  • I Thing of blueberries
  • 1/4 cup Sugar
  • A dash of cinnamon
  • Squeeze of some lemon juice
