Easy Recipe For Leftover Chicken | The Quarantine Cook

Whenever I buy a rotisserie chicken at the grocery store I'll eat half right away and save the rest for some chicken salad.  It slaps on a sandwich, crackers or just straight up. 

INGREDIENTS
-Leftover rotisserie chicken about 1 cup (you can use whatever leftover chicken you have)
-1/4 cup chopped celery
-2 chopped scallions
-2 Tbsp mayo
-1 Tbsp spicy chili sauce (option to use any kind of hot sauce)
-Dash of curry powder
-Salt & pepper

METHOD
-Mix all ingredients together & eat. 

-All you really need for this some leftover chicken and mayo, the celery and scallion are great to add a little crunch and freshness but they aren’t necessary.

- I took the skin off of the leftover chicken and crisped it up in a pan then used it as a crunchy topping for my sandwich.
