The Brisket Taco At Valentina's Tex Mex Is The Most Rockstar Shit In The BBQ Game Today

There's a lot of tradition that comes with barbecue, and especially if you're talking about Texas barbecue. Not that there's any right or wrong way to do it, but there's for sure a standard way. It's pretty much the same as sports if you think about it. I mean there's no right or wrong way to score a touchdown since 6 points are 6 points, but there are still some pretty standard ways that teams go about it. And when a team does something out of the ordinary to score a touchdown, that's a trick play. So that would make the Real Deal Holyfield at Valentina's Tex Mex BBQ the "Philly Special" of the barbecue game. 

When you think about brisket in Texas, Aaron Franklin would be the Michael Jordan. And if we're going to keep making comparisons here, then let's go musical and say that brisket would be like jazz or the blues. Post oak wood, meat, fire, salt, pepper, it all works perfectly together in the smoothest combination and it would be almost sinful to even think about putting sauce on there. Now from jazz and the blues came rock n' roll. And we're dealing with some sold out arena rockstar shit here from Miguel Vidal. 

Mesquite wood, house-made flour tortilla, refried beans, fried potatoes, fried eggs, a strip of bacon, a slice of brisket and topped off with house-made salsa?

Beast mode. 

Just taking everything you thought you knew about huevos rancheros and saying fuck it. Just taking everything you thought you knew about central Texas brisket and saying fuck it. That, my friends, is pure rock.
